  • 1 Egg
  • 1 Tsp Olive Oil
  • 1 Tsp Vanilla Extract
  • 4 - 5 Tbsp Oat Flour
  • 1/2 Tsp Baking Powder
  • 1 Tsp Cinnamon
  • Handful of Chocolate Chips
Recipe
  1. Combine all the wet ingredients in a bowl. Then, add the oat flour, baking powder, and cinnamon, stirring until just combined.
  2. Transfer the mixture into a greased ramekin or glass dish, and sprinkle chocolate chips over the top.
  3. Cook in the microwave on 800W for approximately 2 minutes. Since microwave strengths vary, you may need to adjust the cooking time.
  4. Check the banana bread after 2 minutes and continue to cook in short bursts if necessary until done.
